London Bay Development Group Announces Mina Group as Restaurant Partner at Saltleaf on Estero Bay

Globally acclaimed group, led by Michelin-starred Chef Michael Mina, to bring signature culinary excellence to new waterfront dining destination neighboring The Ritz-Carlton Residences, Estero Bay and Saltleaf Marina.

NAPLES, Fla. (April 2025) — Pioneer developer London Bay Development Group has partnered with The MINA Group as the official operator of the future waterfront restaurant at Saltleaf Marina, located just steps away from The Ritz-Carlton Residences, Estero Bay. Founded by award-winning Chef Michael Mina, the globally celebrated hospitality company known for creating exceptional dining experiences across the world will now bring its culinary artistry to the shores of Estero Bay. Designed by the acclaimed interior design firm Meyer Davis Studio, the public restaurant broke ground in fall 2024, with DeAngelis Diamond serving as the general contractor.

Chef Mina draws on decades of experience for this new concept. Throughout his illustrious career, he has been honored with numerous accolades including a Michelin star, a James Beard Award, and induction into the James Beard Foundation’s “Who’s Who of Food & Beverage in America.” He was most recently named one of Robb Report’s “50 Most Powerful People in American Fine Dining.”

The MINA Group is the force behind more than 30 chef-driven concepts, including Bourbon Steak, MINA’s Fish House, The Bungalow Kitchen by Michael Mina, Orla, and PABU. The Saltleaf Marina restaurant will sit at the edge of the 500-acre master-planned coastal community of Saltleaf on Estero Bay, home to The Ritz-Carlton Residences, Estero Bay. Residents will enjoy convenient access to the marina and private boat slips, along with an unmatched dining destination that reflects the elegance and exclusivity of the surrounding development. Additional details, including the name, menu, and culinary concept, will be unveiled at a later date.

Since launching sales, The Ritz-Carlton Residences, Estero Bay has surpassed $630 million, a testament to its appeal as Southwest Florida’s most refined coastal address. Designed by Arquitectonica with interiors by Meyer Davis Studio and landscape architecture by EDSA, the twin 22-story towers will house 224 expansive condominium residences, priced from the $3 millions and ranging from 2,628 to 3,885 square feet, each featuring two to four bedrooms plus a den. Construction is underway, with the first tower scheduled for completion in early 2026 and the second tower expected to break ground this year.

With sprawling private balconies, unobstructed views of Estero Bay, and curated finish packages, the homes are complemented by five acres of amenities, with 36,000 square feet of indoor offerings. This includes a Wellness Center with fitness equipment, a yoga and Pilates studio, steam rooms and sauna. The Oasis, a centrally located 8,000-square-foot space, will offer a Sunset Lounge, private dining room, Sports & News Café, Wine & Whiskey Room, Card Room and demonstration and catering kitchen. The second tower will feature additional amenities, including a state-of-the-art sports simulator and a screening room.
